New York Steak Strip

New York has laid the most famous claim to the strip steak, but a New York Strip steak is also known as the Delmonico steak, Kansas City Strip steak, Sirloin Club steak, and Shell steak. What is it? The New York Strip is a nice piece of meat cut from the T Bone portion, and it comes from the short loin (middle) area of the cow.

Characteristics of New York Strip steaks include:

•New York Strip steaks are an all-American choice

•New York Strip steaks are the marbled, large end of the short loin

•New York Strip steaks are firm in texture

•New York Strip steaks are tender, but not as tender as Ribeye steaks or Beef Tenderloin steaks

•When it’s attached to the bone, a New York Strip steak is known as a T Bone steak or a Porterhouse steak

Grilling time for New York Strip steaks: Approximately 12 minutes (cook each side twice for 3 minutes).

Prime Rib

The prime rib is from the primal rib, the area behind the shoulder, but above the lower back. It is one of the eight primal cuts of beef and includes some of the most tender muscles on the entire animal. This cut can be comprised of 2 to 7 ribs and comes from ribs 6 through 12 on the animal.
